Broccoli Cornbread Like We do in Providence.
One-half cup margarine melted. One medium or large onion finely chopped. Ten ounces of broccoli finely chopped. Four eggs beaten. Six ounces of cottage cheese. One tsp. of salt. One 8 and 1/2 box of muffin mix.
Combine all of the ingredients except muffin mix. Mix well. Stir in muffin mix. Pour batter into greased 13x9 baking dish. Bake at 400 degrees for thirty minutes. Serves 8 to 12.
Holly Hill Wild Rice Casserole.
One cup of wild rice raw and washed thoroughly. Three cups of bullion. One-half stick of butter. One cup of chopped mushrooms. One cup of chopped scallions. One cup of chopped almonds.
Mix all of the ingredients in a casserole dish. Cover and bake at 350 for 90 minutes.

Wyboo Potato Soup.
4 cups of diced potatoes. 1 large can of chicken broth. 1 quart of milk. 1 stick of margarine. 1 pint of half and half. 1/2 cup of flour. Salt and Pepper to taste. 1 large, diced onion.
Cook the potatoes, onion, chicken broth, salt and pepper until the potatoes are tender. Add three cups of milk, half and half and margarine and stir well. Add flour to one cup of milk and mix well. Add this mixture to the potato mixture. Simmer on low heat until thick but do not boil. Sprinkle a little Chedder cheese on top and garnish with the snipping of the green stem of a spring onion. Works well with toasted French Bread.

Foraged Food. Chanterelles are golden-colored mushrooms that are a favorite SC chefs and foragers. These types of mushrooms have a trumpet-like shape with gill-like ridges on the underside of the fungi. They have a fruit aroma with a light nutty flavor. Usually spotted in the forest.
Clean the mushrooms first and then sauté on medium heat with butter or olive oil and a slight taste of garlic or shallot.
Summerton Crab Dip
1 1/4 cup of mayonnaise. 1tsp of horseradish. 1 cup of white crab meat. 4 tsp. French salad dressing. 1/2 cup of finely grated Cheddar cheese. 1tsp. fresh lemon juice. Dash of Salt.
Mix all of the ingredients and let set; refrigerate several hours or overnight. Garnish with green onion or basil. Serve with crackers.
Elloree Chilled Melon Soup.
3/4 cup of orange juice. 1 cup of plain yogurt. 1 medium cantaloupe peeled, seeded and cubed. 1tabspoon of honey. 1/4 teaspoon of salt. 1/4 teaspoon of ground nutmeg. 1/8 teaspoon of cayenne pepper. A sprig of mint.
Place orange juice, yogurt and cantaloupe in a blender. Cover and process until pureed. Add honey, salt and pepper. Cover and process until smooth. Refrigerate at least one hour. Garnish with a sprig mint.
Before there was a lake there was a British fort.
On the Clarendon side of the lake and across from about where the Santee State Park sits was Fort Watson, a British fortress protecting supplies dispatched from Charlestown to Camden. Maham’s Tower, served General Francis Marion’s men as they fired down on Fort Watson, causing its surrender and thus breaking the supply line.
Travel 301 South from Summerton until you reach the Santee Wildlife Refuge on the right. Turn right and you are on the way to the tower.
Eutaw Springs Shrimp and Grits.
1 lb. medium cooked shrimp, peeled and deveined. 3 cups of water. 1 cup of whipping cream. 1 tsp. of salt. 1/4 cup of butter. 1 cup of quick cook grits, uncooked. 1 cup of sharp cheese shredded. 2 garlic cloves minced. black pepper.
Bring 3 cup of water, whipping cream, butter and salt to a boil. Add the grits whisking constantly for 7 to 8 minutes. Stir in the shrimp, cheese and garlic and cook 1 to 2 minutes until heated thoroughly. Serve with toasted French bread.
New rules for golf carts.
The SC government now has new rules for children and others driving golf carts. A young driver must be at least 16 years if age and have a valid driver’s license. There must be a registration certificate and proof of insurance with the vehicle. Each passenger younger than 12 years of age must wear a seat belt. Seat belts may be obtained from Walmart and Amazon and routinely may be installed by the cart sellers. Carts cannot operate on the street where speed limits exceed 35 mph and must be within 4 miles of the residence where the vehicle is registered. Golf carts may only be operated in daylight hours and municipalities may add to these restrictions.

Tips for catch and release fishermen.
SCDNR recommends minimizing the amount of time that fish are out of the water. Always support a fish’s body horizontally to avoid injury to the fish. Finally, use wet hands and a rubber-coated net to protect a fish's slime coat.

This is the Asian Snakehead Fish, an invasive predator air-breathing fish that kills native lake and river wildlife. Known for its long dorsal fin in can survive also in ditches. SCDNR says it is not welcome here.

SCDNR says never feed alligators. It’s illegal in most states. Do not approach them. Alligators do not know the difference between pets and their natural prey. Avoid swimming in areas with dense vegetation. Alligators hide in vegetation in and around the water. Only swim during daylight hours. Alligators are most active between dusk and dawn.

Brigadier General Francis Marion’s Resting Place.
Revolutionary War hero Francis Marion’s plantation is under water. When the lake was formed his plantation, where he and his wife were buried was to be flooded to become part of the lake. Their burial was moved to higher ground and memorialized by the South Carolina PRT and may be visited without charge just off Highway 45 on Francis Marion Avenue near Pineville.
Goat Island Easy Apple Salad.
1 small can of crushed pineapple, drained. 2 Tbsp. of apple cider vinegar. 1 Tbsp. of flour. 1 egg, beaten. 1/2 cup of sugar. 1 8-oz container of Cool Whip. 8 large apples, chopped. 1 can of chopped nuts. 1/2 can of coconut (optional). 1 can of raisons (optional).
Combine pineapple, vinegar, flour. flour, egg and sugar. Cook until thick, stirring as it thickens. Let cool. Add Cool Whip. Then add apples and nuts and coconuts and raisins.

Vance Cheese Cookies.
4 cups of finely grated cheese. 4 cups of plain flour sifted. 3 and 1/4 sticks or margarine. 2 tablespoons of salt. 2 and 1/4 tablespoons of red pepper.
Mix all ingredients and roll into a long log. Place in the refrigerator overnight. Slice and place a pecan on top of each piece, if desired. Bake at 350 degrees for 10 to 15 minutes. Yields about 10 dozen. Perfect for snacking at the lake.

Gopher Tortoises are protected in South Carolina primarily for their role as habitat builders burrowing long underground trenches used by such other endangered creatures as the Eastern indigo snake, striped newts and gopher frogs for protection from predators, winter nesting and summer heat avoidance. Bird Flu in South Carolina
There have been no reports of Bird Flu in South Carolina, but caution is good advice, especially in an area where ducks and geese migrate. A primary method of transference is within flocks. When cleaning ducks and game birds use surgical gloves and keep feathers and other parts safely deposited as ducks may have the milder case and not show signs of the virus. Report dead or unhealthy birds to SCDNR. Also, be aware that such other animals as pet birds, cows, chickens, cats and rats may be contaminated if they have been in contact with the feces or other bodily fluids of infected birds. But the good news is transference to humans is a very low risk. Still, cook fowl to an internal temperature of 165 degrees.

Short Nosed Sturgeon Remain Endangered.
Native to the Santee and Pee Dee Rivers, these fish are in larvae form in salt water but return to the rivers to mature and live. Though the fish is making a comeback it remains endangered, primarily to loss of habitat.

2 lbs. ground beef cooked and drained. 1/3 cup of vinegar. 2.3 cup of water. 1/3 cup of brown sugar. 1/2 tsp. of chili powder. 1 cup of catsup. 3 tbsp. onion chopped. 3 tbsp. mustard. 1tbsp. flour.
Brown meat in skillet. In a small pan mix the other ingredients and cook until tender. Pour over the meat and simmer for one hour. Serve on a bun with cole slaw or baked beans.

Copperhead season in South Carolina.
The state’s most common venomous snake is moving around in the warm weather preferring place where it blends such as wooded areas, home gardens and the edge of housing. They are looking for a meal of rodents, frogs, lizards and insects. Keeping your yard free of downed leaves and uncut grass discourages the snakes to find another place to lurk. Spray with vinegar and ammonia but do not combine these homemade repellents. Pick one and spray it around areas of your yard, garden or house. Also, you can plant snake-repelling marigolds, allium, lemongrass, mother-in-law’s tongue, garlic, wormwood, basil and yellow alder.

Lt. Col. David duBose Gaillard
He grew up along the lake, between Clarendon and Sumter County, but before there was a lake. He was graduated from The United States Military Academy at West Point in 1884 with an engineering degree. He is perhaps best known for his engineering leadership in the construction of the Panama Canal, which many consider an engineering marvel. He died from a brain tumor before the canal opened. He is buried at Arlington National Cemetary.

2 cans of artichoke hearts, chopped. 2 cans of chopped green chilies. 1/3 to 1/2 cup of mayonnaise. Grated Chedder cheese.
Mix the ingredients together and place in a casserole dish. Top with the cheese and bake at 350 degrees for 30 minutes. Serve with toast squares.
