Deer Hunting With Dogs.
SCDNR seeks public input on hunting deer with dog tracking and flushing.
Monday July 27 in Auditorium of Orangeburg Technical College. 6:30 to 8:00 pm.
SCDNR has received feedback from hunters, landowners and other members of the public expressing a range of perspectives, including concerns, conflicts and complaints related to hunting deer with dogs. Deer hunting with dogs is lawful in coastal South Carolina but not lawful in the upstate.

Easy Summer Pie
1 10 inch pie shell
1 cup of sugar
2 eggs
1 stick of butter
tsp vanilla
½ cup of raisins
½ cup of pecans
½ cup of coconut
½ cup of blueberries.
Combine all ingredients and pour into the pie shell. Bake at 350 degrees for 35 minutes.

Northbound 95 Welcome Center closed.
The South Carolina Department of Transportation has closed the I-95 northbound rest area at mile marker 99 as of Monday, July 13.
The closure is necessary to facilitate the construction of the I-95 over Lake Marion Bridge Replacement Project. Closing the rest area will enhance the safety of drivers traveling through the work zone while providing space to accommodate construction traffic, equipment, and materials needed for the project.

An easy summer night delight.
4 chicken breasts
2 cans of Campbells Cream of Chicken Soup
1/3 cup of lemon juice
1 small onion diced
Two tablespoons of capers
Place chicken breasts in chaffing dish sprayed with cooking spray. Salt and pepper to taste. Mix soup with lemon juice, capers and add onion. Pour mixture over the breasts. Cook for an hour or more (depending on the size of the breasts) at 350 degrees. Good served over white rice or pasta.

Wyboo Potato Soup.
4 cups of diced potatoes. 1 large can of chicken broth. 1 quart of milk. 1 stick of margarine. 1 pint of half and half. 1/2 cup of flour. Salt and Pepper to taste. 1 large, diced onion.
Cook the potatoes, onion, chicken broth, salt and pepper until the potatoes are tender. Add three cups of milk, half and half and margarine and stir well. Add flour to one cup of milk and mix well. Add this mixture to the potato mixture. Simmer on low heat until thick but do not boil. Sprinkle a little Chedder cheese on top and garnish with the snipping of the green stem of a spring onion. Works well with toasted French Bread.

Foraged Food. Chanterelles are golden-colored mushrooms that are a favorite SC chefs and foragers. These types of mushrooms have a trumpet-like shape with gill-like ridges on the underside of the fungi. They have a fruit aroma with a light nutty flavor. Usually spotted in the forest.
Clean the mushrooms first and then sauté on medium heat with butter or olive oil and a slight taste of garlic or shallot.
Elloree Chilled Melon Soup.
3/4 cup of orange juice. 1 cup of plain yogurt. 1 medium cantaloupe peeled, seeded and cubed. 1tabspoon of honey. 1/4 teaspoon of salt. 1/4 teaspoon of ground nutmeg. 1/8 teaspoon of cayenne pepper. A sprig of mint.
Place orange juice, yogurt and cantaloupe in a blender. Cover and process until pureed. Add honey, salt and pepper. Cover and process until smooth. Refrigerate at least one hour. Garnish with a sprig mint.

Before there was a lake there was a British fort.
On the Clarendon side of the lake and across from about where the Santee State Park sits was Fort Watson, a British fortress protecting supplies dispatched from Charlestown to Camden. Maham’s Tower, served General Francis Marion’s men as they fired down on Fort Watson, causing its surrender and thus breaking the supply line.
Travel 301 South from Summerton until you reach the Santee Wildlife Refuge on the right. Turn right and you are on the way to the tower.
Eutaw Springs Shrimp and Grits.
1 lb. medium cooked shrimp, peeled and deveined. 3 cups of water. 1 cup of whipping cream. 1 tsp. of salt. 1/4 cup of butter. 1 cup of quick cook grits, uncooked. 1 cup of sharp cheese shredded. 2 garlic cloves minced. black pepper.
Bring 3 cup of water, whipping cream, butter and salt to a boil. Add the grits whisking constantly for 7 to 8 minutes. Stir in the shrimp, cheese and garlic and cook 1 to 2 minutes until heated thoroughly. Serve with toasted French bread.

Tips for catch and release fishermen.
SCDNR recommends minimizing the amount of time that fish are out of the water. Always support a fish’s body horizontally to avoid injury to the fish. Finally, use wet hands and a rubber-coated net to protect a fish's slime coat.

There are about 100,000 alligators in South Carolina.
SCDNR says never feed alligators. It’s illegal in most states. Do not approach them. Alligators do not know the difference between pets and their natural prey. Avoid swimming in areas with dense vegetation. Alligators hide in vegetation in and around the water. Only swim during daylight hours. Alligators are most active between dusk and dawn.
Don’t - kill, harass, touch, or attempt to move alligators. It is illegal to do so, and the potential for being bitten or injured by a provoked alligator is high.
Don’t- allow small children or pets to play by themselves in or around water.
Don’t- swim at night or during dusk or dawn when alligators most actively feed.
Don’t- feed alligators, it is illegal. Alligators overcome their natural shyness and become accustomed or attracted to humans when fed.
Don’t- throw fish scraps into the water or feed other wildlife in areas where alligators live. Although you are not intentionally feeding alligators, the end result can be the same.
Don’t- remove any alligators from their natural habitat or accept one as a pet. It is a violation of state law to do so. Alligators do not become tame in captivity and handling even small ones may result in bites.
In addition, never go near hatchling/young alligators or pick them up. They may seem cute and harmless, but the mother alligator will be nearby, and will protect her clutch for at least two years.

Author Julia Mood Peterkin
was a writer residing on a plantation in Fort Motte. She was a graduate of Converse College and a Pulitzer Prize winning author. Her works were controversial in that she faithfully included dialect spoken by African American workers on the plantation. She passed in 1961.
Brigadier General Francis Marion’s Resting Place.
Revolutionary War hero Francis Marion’s plantation is under water. When the lake was formed his plantation, where he and his wife were buried was to be flooded to become part of the lake. Their burial was moved to higher ground and memorialized by the South Carolina PRT and may be visited without charge just off Highway 45 on Francis Marion Avenue near Pineville.
Goat Island Easy Apple Salad.
1 small can of crushed pineapple, drained. 2 Tbsp. of apple cider vinegar. 1 Tbsp. of flour. 1 egg, beaten. 1/2 cup of sugar. 1 8-oz container of Cool Whip. 8 large apples, chopped. 1 can of chopped nuts. 1/2 can of coconut (optional). 1 can of raisons (optional).
Combine pineapple, vinegar, flour. flour, egg and sugar. Cook until thick, stirring as it thickens. Let cool. Add Cool Whip. Then add apples and nuts and coconuts and raisins.
Vance Cheese Cookies.
4 cups of finely grated cheese. 4 cups of plain flour sifted. 3 and 1/4 sticks or margarine. 2 tablespoons of salt. 2 and 1/4 tablespoons of red pepper.
Mix all ingredients and roll into a long log. Place in the refrigerator overnight. Slice and place a pecan on top of each piece, if desired. Bake at 350 degrees for 10 to 15 minutes. Yields about 10 dozen. Perfect for snacking at the lake.

Endangered Species in South Carolina
Gopher Tortoises are protected in South Carolina primarily for their role as habitat builders burrowing long underground trenches used by such other endangered creatures as the Eastern indigo snake, striped newts and gopher frogs for protection from predators, winter nesting and summer heat avoidance. The tortoises are losing their habitat due to land development.

Short Nosed Sturgeon Remain Endangered.
Native to the Santee and Pee Dee Rivers, these fish are in larvae form in salt water but return to the rivers to mature and live. Though the fish is making a comeback it remains endangered, primarily to loss of habitat.

2 lbs. ground beef cooked and drained. 1/3 cup of vinegar. 2.3 cup of water. 1/3 cup of brown sugar. 1/2 tsp. of chili powder. 1 cup of catsup. 3 tbsp. onion chopped. 3 tbsp. mustard. 1tbsp. flour.
Brown meat in skillet. In a small pan mix the other ingredients and cook until tender. Pour over the meat and simmer for one hour. Serve on a bun with cole slaw or baked beans.

He grew up along the lake, between Clarendon and Sumter County, but before there was a lake. He was graduated from The United States Military Academy at West Point in 1884 with an engineering degree. He is perhaps best known for his engineering leadership in the construction of the Panama Canal, which many consider an engineering marvel. He died from a brain tumor before the canal opened. He is buried at Arlington National Cemetary.

Third Water Sweet Potato Casserole
3 cups of mashed cook sweet potatoes. 2 eggs. 1 cup of sugar. 1 stick of margarine. 1/4 cup of milk. 1 tsp. of vanilla.
Mash potatoes well. Melt the margarine. Combine all of the ingredients and mix well. Spray a baking dish with Pam. Bake at 350 degrees for thirty minutes. Cover with mini marshmallows and brown. Enjoy.

Chapel Creek Artichoke Dip
2 cans of artichoke hearts, chopped. 2 cans of chopped green chilies. 1/3 to 1/2 cup of mayonnaise. Grated Chedder cheese.
Mix the ingredients together and place in a casserole dish. Top with the cheese and bake at 350 degrees for 30 minutes. Serve with toast squares.
